  • Organic Vs. Non-Organic Matcha

    None of our matcha options are organic. This isn't due to the high price or a lack of belief in the value of organic products, many of our teas and tisanes are organic. It's because, at the quality tier we require, consistently sourcing organic matcha is genuinely difficult: the shading process that defines matcha is difficult under organic constraints, the farms best suited to matcha are too small to absorb the added cost and risk, and Japan's own certification rules make it structurally harder (and rightly so) for the top matcha-growing regions to qualify.

    JAS Certification

    Organic matcha sold as organic in Japan has to carry JAS (Japan Agricultural Standard) certification which is the government's official organic seal, mutually recognized with USDA Organic under a 2013 equivalence agreement. Getting it isn't simple:

    • A multi-year transition period: A farm has to convert to fully organic management (no synthetic fertilizers, no synthetic pesticides) for three years before the crop can be sold as certified organic. During that whole window, the farm carries organic-level costs and risk without being able to charge organic prices, because the crop still legally counts as conventional.
    • Yield drops during transition: Soil biology, pest pressure, and plant health all shift as a farm moves off synthetic inputs, and yields are often unpredictable (sometimes significantly lower) while the system stabilizes.
    • Dedicated, separated infrastructure: Organic tea must be processed and packaged using facilities and equipment used only for organic product, not shared with any conventional line.
    • Exhaustive documentation:Every input (organic fertilizer purchases, etc.) and every activity (fertilizing, weeding, harvesting, delivery) has to be logged and kept on file, auditable back through the full chain.
    • Annual third-party inspection:A registered certifying body audits the paperwork and the farm itself every year to maintain certification.
    • Contamination risk from neighbors: Tea farms sit close together in Japan's major growing regions. Preventing pesticide or fertilizer drift from an adjacent conventional farm often requires a buffer zone, which eats into usable growing area on farms that are already small.

    JSA vs. USDA Organic

    None of this is unique to Japan, the EU and US impose similar transition and documentation requirements. What makes it particularly hard for matcha specifically is that it compounds on top of the shading risk above: a farm has to hit JAS's input and process restrictions while trying to protect the very narrow nutrient-production window shading depends on.

    There's also a regional wrinkle worth noting: certified organic tea farmland in Japan isn't evenly distributed. As of the most recent government figures, Kagoshima Prefecture (one of the country's largest and most consolidated tea-growing regions) accounts for a meaningfully larger share of organic-certified tea farmland than Kyoto's Uji region, despite Uji's traditional prestige in matcha. The exact reasons for that gap aren't fully documented, but Kagoshima's larger estate sizes plausibly make the transition period and dedicated-infrastructure requirements more absorbable than they are for Uji's smaller, more fragmented farms.

    Kyoto and Kagoshima Prefectures

    According to Japan's Ministry of Agriculture, Forestry and Fisheries, certified organic tea acreage in Japan is also lopsided by region. Nationally, Kagoshima Prefecture holds roughly 49% of all Organic JAS tea field area, and Kyoto (despite its outsized reputation in matcha) holds only about 4%, or roughly 60 of its 1,530 total tea hectares. Part of that gap comes down to farm structure: Kagoshima's estates are larger and flatter, with 98% of its tea fields harvested using ride-on machinery, versus only about 21% in Kyoto, where small, steep, often mountainous plots make large-scale mechanization difficult. Those same conditions — small, fragmented, hard-to-mechanize farms — are exactly what make the multi-year transition, dedicated infrastructure, and documentation costs of organic certification hardest to absorb.

    The Economics

    Matcha farms in Japan's key growing regions tend to be small relative to tea estates in other parts of the world, and small even by the standards of Japan's other tea categories. Small harvests mean tight margins, and tight margins mean the added costs of JAS certification as well as the transition period, the separate processing lines, the annual audits, the yield risk, often don't pencil out.

    In principle, a high enough price premium for organic matcha could offset those costs. In practice, that premium usually isn't there. And that comes back to the shading problem: it's harder to consistently produce matcha at the highest quality tier under organic constraints, at the scale and price point we need. Farms that do the hard work of getting certified organic are often trading some amount of quality ceiling for the certification, which is a legitimate choice for a farm to make, but not the trade we're willing to make for the matcha we carry.

Remove synthetic fertilizers from that equation, and the margin for error narrows further; organic growers often need to allow more sunlight to keep plants healthy, which can mean less of the nutrient development matcha depends on.

Some organic producers do turn out excellent matcha, but the added difficulty and cost of organic cultivation, layered on top of the shading process's already narrow margin for error, means organic options at our quality bar are rare and inconsistent.
