The first installment in Hugo Tea's online tea education curriculum:

Using a Gaiwan 101

In this class, you'll learn to steep teas using a gaiwan ("lidded bowl"), the tea steeping vessel of choice in gongfu, or small-format tea steeping. In this style of tea preparation, tea is steeped with more leaves, less water, and for less time across multiple steeps in order to appreciate its nuances through brief, controlled extractions. This is a popular method of tea making across Asia—and it all starts with the gaiwan.
(Or sometimes, a small teapot—but that's another class!)

This class will be taught by our Head of Education, Claire. You'll be supplied our house gaiwan, a gong dao bei ("fairness pitcher"), a stainless steel filter, and 3 whole leaf teas to practice with under Claire's expert guidance. Learn to evaluate leaf material, handle and manipulate the gaiwan, and adeptly steep whole leaf teas while analyzing their characteristics in ways not possible in large-format tea steeping.

This is the perfect way to elevate your at-home tea practice and learn to appreciate quality whole-leaf teas at a high level. The lessons learned here will be applicable across your tea drinking journey; from the rolling tea fields of Uji to the towering mountains of Yunnan, this is how tea is prepared and appreciated by the people who produce it.
